Unlike traditional aging methods, the Alfonso Añejos undergo maturation in a dedicated, climate-controlled room—an experimental process inspired by Nelson’s fascination with the depth and nuance that French Oak can impart.

After studying how some of the world’s most renowned wines achieve their complexity through French Oak barrels, Nelson became determined to incorporate this distinguished wood into his own aging environment. The result is a visionary dual-aging technique that marries classic Spanish Cedar with the elegance of French Oak.
